STEM Camp Theme - Help!

Today, I accepted a position teaching a 5 week STEM camp/course. Each week will have a different theme. So far, the themes are coding, robotics, web design, and video game design. Im planning to do a 2 hour engineering design theme in the evenings where they tackle different design challenges (pasta towers, bridges, egg drop, etc).

Last year, they did drones for a week, but it was a nightmare. We want them to be able to take the tech home at the end of the week (so, for example, theyd get to keep the Mindstorms robot), if possible. However, the cost of a decent drone is prohibitive, require soldering (Im crazy, not insane), and the ones they got last year were duds for various reasons.

Anyone have a theme idea for the last week? They want something splashy and exciting for marketing purposes.

Or can anyone recommend reasonably priced/not sketchy drones?

Since it's a camp, are you in an outdoor setting? And is it overnight?

Can you do a nature/biology sort of project? Finding animal tracks, examining scat, bird counts, microbes in the stream, that sort of thing.

Or maybe something more related to earth science. If you have access to telescopes, you can do some astronomy. Weather measurements, statistics, and predictions. Maybe even the minute climate differences between a wooded area and a meadow.

No, not outdoors, but we can go outside if warranted.

It's not a sleep away type camp. It's a summer academic academy. However, the kids will be living on campus. 5 week course, for school credit.

It's being geared for 6th-8th grades.

A few ideas: rockets, architecture (Legos, origami, etc.), computer animation.
