Iím open to ideas that are simple-ish to make, made from easily found ingredients (we have a Whole Foods, but no Trader Joeís.

Throw dead at me please, Iím getting bored taking the same meals to the daycare every day.

scrambled eggs with cheese and ham

pickle (or cuke or ....?) set on cream cheese spread on lunch meat--roll up

tunafish salad

chicken caesar salad

peanut butter in celery

cheeseburger with bacon and avocado

I don’t stick to any diet, just try to eat healthy so I meal prep for lunch each Sunday.
This is one of the meals I rotate through for lunches. I make 5 for the week at a time with all of my lunches, this one included. I use pepper jack cheese.

I like to do bento boxes... Iím more of a snacker... this has good ideas to mix and match. You could just omit the carb category.

Iím not true keto, but super close because it keeps my blood sugar in check and I feel amazing doing this. Several of those look pretty adaptable for how I eat. (And, oh my gracious, they look so pretty.)

I love taziki. If I could figure out how to adapt it I would be adding more Greek and Lebanese food back into my diet.

I tend to do lots of small portions of different foods and eat a few times a day. Bento style eating works for me with a large meal in the evening. Today I have a bit of a salad theme going. Chicken salad, egg salad, cucumber salad, pickles for a snack, coconut flour cookies, and tiramisu. (One is those deserts will be for this afternoon/evening.)

I really like a variety of foods to draw from because I love ethnic flavors. I really just adapt everything to my dietary needs.

Fry around of bulk sausage (can be spicy if you like) melt a brick of cream cheese in it. Use this to stuff halved and seeded mini peppers and bake. ( I think I do 375 or so until bubbly and peppers are soft.

It's sooooo good. We would eat this as a fancy Sunday snack, as a supper, and it reheats well too. I have added onions when cooking the sausage, and even spinach and mushrooms. You could also mix a can of rotel in.
