Here is a quote from the website
http://www.olympic.org/uk/organisati...charter_uk.asp.
It would be something you could share with the students.
"Olympism is a philosophy of life, exalting and combining in a balanced whole the qualities of body, will and mind. Blending sport with culture and education, Olympism seeks to create a way of life based on the joy found in effort, the educational value of good example and respect for universal fundamental ethical principles."
Olympic Charter, Fundamental principles, paragraph 2
There is also a really neat educational kit on the following link.

The Olympic Express is an E-Journal they have. You could use that as the title for your reading center. Books can get medals too so you could even incorporate those (ex. Newbery)
I guess it depends on how much you want it to just be about the Olympics or if you want to incorporate Beijing, sports, etc.
BB Titles:
*Ms./Mrs. ________ 's Gold Medalists/Champions/Olympians
*Math Olympics
*5 Golden Things About Me (title) - and use the Olympic rings as the cut-outs. Children can write one thing about them that's special in each ring.
